New potato variety

The Potato Project Launches India’s First Gourmet Potato QSR in Mumbai

On July 31, 2026, The Potato Project will open its flagship store in Mahavir Nagar, Kandivali West, Mumbai, introducing what it calls “India’s first gourmet potato eatery.” This is not just another restaurant launch but the beginning of an entirely new category in India’s Quick Service Restaurant (QSR) industry—one built around a single ingredient with limitless culinary potential. Positioned as “Indian Gourmet Potato,” the brand was created with a clear mission: to transform how people perceive, use, and enjoy one of the world’s most familiar ingredients. Unlike conventional QSR concepts, The Potato Project emerged from extensive research into potato origins, global varieties, and Indian market opportunities, rather than from pre-existing recipes. India ranks second globally in potato production, yet only a fraction is processed, and premium varieties remain largely inaccessible to Indian consumers—a gap the brand aims to bridge.

Premium Offerings and Experiential Dining:
The menu features over 20 signature dishes crafted from three potato types—white, purple, and sweet potato—alongside handcrafted mocktails and specially curated Jain options. The brand places special emphasis on purple potato, celebrated globally for its vibrant color, distinct texture, rich flavor, and antioxidant properties, positioning it as a symbol of innovation. Beyond dining, guests can explore interactive experiences including the “Potato Lab,” “Potato Passport,” “World Potato Tour,” and a “Potato Knowledge Center.” Mumbai was chosen for its historical significance as the entry point for potatoes brought by Portuguese traders—a legacy still reflected in the local name “batata.” Designed as a specialized QSR brand with standardized recipes, documented systems, quality control protocols, and franchise-ready infrastructure, The Potato Project aims to expand across India and eventually international markets. As the founder states, “We are not creating just another food outlet—we are creating a new food category with one of the world’s most beloved ingredients.”
