Goseong County in Gangwon Province, South Korea, is moving forward with the commercialization of “Gamja Sirutteok,” a traditional local dish made from the region’s specialty potatoes. This chewy and mild-flavored potato rice cake has faced challenges in distribution and storage using traditional preparation methods, limiting its commercial potential. To overcome these obstacles, the county plans to develop a processing method that applies moisture retention and starch structure stabilization technologies, allowing the product to maintain quality even through rapid freezing and thawing processes.
With this new technology, Goseong aims to transform the traditional dish into a processed food product suitable for nationwide distribution, including online sales. The developed products will be promoted through local festivals, tasting events, and direct sales markets, with plans to expand into a wider range of processed goods. Through this initiative, the county expects to increase consumption of local agricultural products and contribute to higher farm incomes in the region.
