The hostesses call “spider web” thin vermicelli, which is added to the soup just a couple of minutes before being cooked. Oleg Gordeev, a scientist at the South Ural Research Institute of Horticulture and Potato Growing (Chelyabinsk), came up with an interesting and more useful analogue of this flour product – a “spider web” of potatoes. And he is preparing to obtain a patent for the technology of its manufacture.

Thinly sliced ​​dried “strings” of potatoes really resemble pasta and are also cooked very quickly – in any case, much faster than the usual dried potatoes, which take about an hour to recover.

To bring the potato cobweb to half-readiness, it is enough to dip the product in hot or cold water for 8-10 minutes. Further, the semi-finished product can be used for cooking potato pancakes, casseroles and other potato dishes. And also any others. As the author notes, his “cobweb” looks great in soup and adds piquancy to a variety of salads.

Products are prepared for drying

It should be noted that for Oleg Gordeev, the “cobweb” is far from the first invention. But before that, the doctor of technical sciences and the head of the potato growing department specialized in engineering projects, in his “baggage” there is, for example, a patent for a device for sorting round-shaped objects. The scientist explains his interest in “culinary creativity” by the desire to develop the direction of potato processing in Russia, so that in good years the potatoes are not thrown away, but harvested for future use. By the way, the “cobweb” is really well kept (observations of the organoleptic properties of the product have been conducted for more than two years).

The idea of ​​creating a “web” came spontaneously, and the recipe had to be refined for a long time. “At first, the potatoes turned black during the drying process,” says Oleg Gordeev. – At home there was a manual shredder for carrots, I used it to cut potatoes. Then he improved the drying technology, and everything worked out. “

Now the “cobweb” has a pleasant uniform color (yellow or white, depending on the type of raw material). For its production, you can use any potato, but it is desirable, according to the observations of the scientist, that the tubers are smooth and contain more starch.

 This semi-finished product is a real find for tourists, military men and everyone who spends a lot of time on the road or whose rhythm of life does not allow spending time peeling potatoes, but so far only YUNIISK employees can appreciate all its advantages.

You can’t buy a potato “spider web” in a store: in order to bring an invention to an industrial level, you need to get away from manual labor. “It is necessary to develop a mechanical shredder for potatoes,” explains the scientist, “and this requires financial investments.”

At the moment, Oleg Gordeev has applied for a patent for a method for preparing a “web” and hopes for a response from investors interested in the implementation of a promising project.
