Timiryazev Academy Scientists Present Breakthroughs in Potato Processing – from Diabetic Nutrition to Zero-Waste Technologies

A delegation from the Technological Institute of the Russian State Agrarian University – Moscow Timiryazev Agricultural Academy (RGAU-MSHA) took part in the scientific-practical conference “Current State and Emerging Trends in Potato Breeding, Seed Production, and Processing,” hosted by the Lorch Federal Research Center for Potato. At the session dedicated to cultivation and processing technologies, the university’s researchers presented solutions in two strategic areas. Professor Albert Nugmanov and Associate Professor Anna Mustafina revealed the specific methods for processing low-starch potato varieties to create dietary products tailored for people with diabetes. Meanwhile, Associate Professors Svetlana Ildirova and Pavel Osmolovsky proposed an innovative technique for using substandard potatoes as a dry additive for the baking industry, paving the way for waste-free production and efficient resource utilization.

The practical relevance of these developments was underscored by 4th-year student Daria Chernysheva, who, during her internship at the Lorch Center, is investigating modified starches and biodegradable films. The collaboration between the Technological Institute and the Federal Research Center is actively expanding under a targeted training program. The effectiveness of this science-education partnership is further validated by the achievements of young researchers: master’s graduate Vitaly Korotkov, now a junior researcher at the Center, won the All-Russian competition for the best scientific work in 2026 and is continuing his academic path in postgraduate studies, demonstrating the strong succession of scientific talent and the high potential of joint research initiatives.
