Eagle Eye Produce Switches On Automated Packing Facility with AI Optical Grading in Idaho Falls

Eagle Eye Produce has completed a new red and yellow potato packing facility at its existing operation in Idaho Falls, Idaho, adding greater automation and AI-powered optical grading to its packing capabilities, the company announced on October 5, 2026. After more than a year of construction and development, the facility is now operational.

Built within the company's existing Idaho Falls complex, the plant incorporates advanced technology throughout the packing process. Its centrepiece is AI-powered optical grading, designed to improve grading consistency against customer specifications — a chronic pain point in fresh-market potatoes, where a lot that misses a retailer's size or defect spec can lose its programme placement. The increased automation is expected to support greater efficiency, quality and flexibility across the packing operation.

Eagle Eye Produce frames the investment as a response to demand growth: the facility strengthens its ability to support the continued expansion of its red and yellow potato programmes while enhancing packing capabilities. The company calls it a significant investment in its team and operations, aimed at meeting evolving customer requirements as its potato programmes grow.

The commissioning is well timed against the 2026 crop. Idaho's harvest, now in its final phase, is coming in lighter than last year — planted area is down about 13,000 acres to 298,915, and grower reports point to below-average yields with smaller size profiles. In such seasons, packing-line precision matters more, not less: extracting the maximum pack-out percentage from a smaller, more variable crop is where automated optical grading earns its capital back. AI-driven systems grade every tuber against multiple parameters simultaneously — size, shape, external defects — at line speeds no manual crew can sustain, and they do not tire during the long autumn pack-out.

Eagle Eye's project is also part of a broader capital cycle in US potato packing. Across Idaho and the Columbia Basin, grower-shippers have been renewing lines with optical graders and robotic palletising, driven by retail quality demands and persistent labour scarcity. The company has not disclosed the investment amount, line capacity or equipment suppliers for the Idaho Falls facility — details that would allow a fuller assessment of the project's scale and that remain open for clarification.
