Chinese Scientists Develop Natural Hydrogel to Curb Sprouting and Toxin Accumulation in Stored Potatoes

In a significant breakthrough for post-harvest food preservation, researchers in China have engineered a novel hydrogel formulation that addresses two persistent challenges in potato storage: premature sprouting and the hazardous accumulation of solanine. The hydrogel, synthesized from eco-friendly biomaterials—sodium alginate, cyclodextrin, lemongrass oil, and calcium ions—acts as a smart delivery system.
