It was from this variety of potatoes that the largest chain of fast food restaurants made fries. The tubers are long, ideal for cutting straws, which have become an integral part of the menu of any fast food. And now the golden stripes began to disappear, allegedly due to crop failure. But in the Potato Union, this version was rejected.
“The leading producers of french fries were fully provided with raw materials. All the obligations that farmers took on last season were fulfilled,” said Aleksey Krasilnikov, Executive Director of the Potato Union.
That is, the farmers grown the contracted potatoes and sold them to processors, and at this stage the vegetables were lost. Almost the only plant in Russia where tubers are cut into strips and frozen, refuses to talk about a strange situation.
But for cooking fries, in addition to “Innovator”, another fifteen varieties of potatoes are suitable. Some of them were compared with Ivan Panov, the sous-chef of one of the capital’s restaurants.
Several types of potatoes were purchased for the experiment. The first grade is Dutch, just the same they make fries for one of the most popular fast food restaurants. The second grade is elongated, it produces the same long straws. The third is the most ordinary domestic potato, and the fourth was bought at a fast food restaurant.
The taste of the prepared “Innovator” is recognizable immediately. The surprise was the potato of German origin “Gala”, which has long been common in Russia and can be a great alternative. Potatoes from another American fast food chain turned out to be the exact opposite of both Innovator and Galya.
“Yes, unlike these options, the taste of the peel prevails here,” the sous chef clarifies.
According to the Ministry of Agriculture, there is no shortage of potatoes in Russia, and this year they have sown even more by 4 percent. According to the results of last year, Russia is one of the three leaders in the production of potatoes – 18.3 million tons.
More are grown only in China and India. Plus, foreign companies bring their own potatoes. The main importers are Egypt with 50% of deliveries, Belarus with 16.3% of deliveries and Azerbaijan with 14.6%.
