Tartiflette Savoyarde Recipe
Tartiflette Savoyarde is a classic French dish originating from the Savoie region. It’s a hearty and comforting potato casserole made with layers of potatoes, reblochon cheese, lardons (bacon or pancetta), onions, and white wine. Here’s how you can prepare this delicious and indulgent dish at home.
Ingredients:
- 2 lbs (about 1 kg) waxy potatoes, peeled and thinly sliced
- 1 lb (450g) reblochon cheese, sliced
- 1/2 lb (225g) lardons (thick-cut bacon or pancetta), diced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup dry white wine
- 1 cup crème fraîche
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Cook the Lardons:
In a large skillet over medium heat, cook the lardons until they are crispy and golden brown. Remove them from the skillet and set aside on a paper towel-lined plate to drain excess grease.
3. Sauté Onions and Garlic:
In the same skillet, add the sliced onions. Sauté until they are soft and translucent. Add minced garlic and cook for another minute. Remove from heat and set aside.
4. Prepare the Potatoes:
Peel and thinly slice the potatoes. You can use a mandoline slicer for even slices.
5. Assemble the Tartiflette:
- In a buttered baking dish, layer half of the sliced potatoes at the bottom.
- Spread half of the sautéed onions and garlic over the potatoes.
- Add half of the cooked lardons on top.
- Arrange half of the sliced reblochon cheese over the lardons.
- Repeat the layers with the remaining potatoes, onions, lardons, and cheese.
6. Pour in the Wine:
Pour the white wine evenly over the layers. This adds a delightful flavor to the dish.
7. Add Crème Fraîche:
Spoon the crème fraîche over the top of the layered ingredients. Season with salt and freshly ground black pepper.
