Lyonnaise Potatoes Recipe

Ingredients:

  • 2 lbs (about 1 kg) potatoes, peeled and sliced into 1/4-inch rounds
  • 2 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
  • Peel the potatoes and slice them into 1/4-inch rounds. It’s essential to keep the slices uniform to ensure even cooking.
  1. Parboil the Potatoes:
  • Place the potato slices in a large pot of salted boiling water. Parboil them for about 5 minutes, or until they are slightly softened but not fully cooked. Drain the potatoes and set them aside.
  1. Sauté the Onions:
  • In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the thinly sliced onions and sauté until they are soft and golden brown, stirring occasionally. This process may take about 15-20 minutes. Once caramelized, remove the onions from the skillet and set them aside.
  1. Cook the Potatoes:
  • In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Arrange the parboiled potato slices in a single layer in the skillet. Cook the potatoes without stirring, allowing them to develop a golden crust on the bottom. After 5-7 minutes, flip the potatoes using a spatula to brown the other side. Cook until the potatoes are golden and crispy on both sides. Season with salt and freshly ground black pepper to taste.
  1. Combine Potatoes and Onions:
  • Once the potatoes are crispy and golden, add the caramelized onions back into the skillet. Gently toss the potatoes and onions together, allowing them to combine and heat through for a few minutes. Adjust the seasoning if necessary.
  1. Garnish and Serve:
  • Remove the skillet from the heat and transfer the Lyonnaise potatoes and onions to a serving dish. Garnish with freshly chopped parsley for a burst of color and added freshness.
  1. Serve Warm:
  • Lyonnaise Potatoes are best served warm and can be enjoyed as a side dish with roasted meats, grilled fish, or as a delicious accompaniment to a variety of main courses.
