Aloo Gobi (Potato and Cauliflower Curry)

Aloo Gobi is a popular vegetarian dish in Indian cuisine, made with potatoes (aloo) and cauliflower (gobi) cooked in a blend of aromatic spices. It’s a delightful and flavorful dish that can be served with roti, naan, or rice. Here’s how you can make Aloo Gobi at home:

Ingredients:

  • 2 medium-sized potatoes, peeled and cut into cubes
  • 1 medium-sized cauliflower, cut into florets
  • 2 tablespoons oil (canola, vegetable, or ghee)
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, chopped for garnish

Instructions:

  1. Parboil Potatoes and Cauliflower:
  • Boil water in a large pot and add a pinch of salt.
  • Add potato cubes and cauliflower florets. Parboil for about 5-7 minutes until they are partially cooked. Drain and set aside.
  1. Sauté Cumin Seeds:
  • Heat oil in a large, heavy-bottomed pan over medium heat. Add cumin seeds and let them splutter.
  1. Add Onions and Ginger-Garlic Paste:
  • Add chopped onions to the pan. Sauté until they turn golden brown. Add ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  1. Add Tomatoes and Spices:
  • Add chopped tomatoes to the pan. Cook until they turn soft and the oil begins to separate from the mixture.
  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes until the spices are well incorporated into the mixture.
  1. Add Parboiled Potatoes and Cauliflower:
  • Add the partially cooked potatoes and cauliflower to the pan. Mix gently to coat the vegetables with the spice mixture.
  1. Cover and Cook:
  • Cover the pan and let the Aloo Gobi cook on low heat. Stir occasionally to prevent sticking. Cook until the potatoes and cauliflower are tender, about 15-20 minutes.
  1. Add Garam Masala:
  • Once the vegetables are cooked, add garam masala and mix well. Adjust salt and spices according to your taste preferences.
  1. Garnish and Serve:
  • Remove the pan from heat. Garnish the Aloo Gobi with freshly chopped cilantro leaves.
  • Serve hot with naan, roti, or steamed rice.
