Pommes Anna – France

Recipe for Pommes Anna

Ingredients:

  • 6 to 8 large russet potatoes
  • 1/2 cup (1 stick) unsalted butter, melted
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme leaves (optional, for garnish)

Instructions:

1. Prepare the Potatoes:

  • Peel the potatoes and rinse them under cold water to remove excess starch. This will help the potatoes hold their shape and not stick together when cooking.

2. Slice the Potatoes:

  • Using a sharp knife or a mandoline slicer, slice the potatoes into very thin, even rounds (about 1/8 inch or 3 mm thick). Place the sliced potatoes in a bowl of cold water to prevent them from browning.

3. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

4. Assemble the Pommes Anna:

  • Brush a 9-inch (23 cm) ovenproof skillet or a round baking dish with some of the melted butter.
  • Start layering the potato slices in the skillet or baking dish, overlapping them slightly to form a circular pattern. Season each layer with a pinch of salt and freshly ground black pepper and brush with melted butter.
  • Continue layering the potatoes and seasoning until you’ve used all the potato slices, ending with a layer of potatoes on top. Press down gently to compact the layers.

5. Cook on the Stovetop:

  • Place the skillet or baking dish on the stovetop over medium heat. Cook for about 5-7 minutes or until the bottom layer of potatoes starts to brown and become crispy. This will help the Pommes Anna hold together when you flip it.

6. Finish in the Oven:

  • Once the bottom is crispy, transfer the skillet or baking dish to the preheated oven. Bake for about 30-40 minutes or until the potatoes are tender when pierced with a fork and the top is golden brown and crispy.

7. Flip and Serve:

  • To flip the Pommes Anna, place a flat plate or a second skillet that’s slightly larger than the first one on top of the potatoes. Carefully and quickly invert the skillet so that the Pommes Anna slides onto the plate or second skillet. Be cautious, as it will be hot.

8. Garnish and Serve:

  • If desired, garnish the Pommes Anna with fresh thyme leaves or additional melted butter. Slice it into wedges or portions and serve hot as a side dish.
