Patatas Panaderas Recipe
Patatas Panaderas, or “Baker’s Potatoes,” is a classic Spanish dish known for its simple yet delicious combination of potatoes, onions, and aromatic herbs. This dish is a popular side dish in Spain and pairs wonderfully with a variety of main courses. Here’s how to make it:
Ingredients:
- 4-5 medium-sized potatoes (preferably waxy potatoes like Yukon Gold or red potatoes)
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- 1 teaspoon smoked paprika (pimentón)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme (or fresh thyme leaves)
- 1/2 teaspoon dried rosemary (or fresh rosemary sprigs)
- 1/2 cup chicken or vegetable broth
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the potatoes: Peel the potatoes and slice them into rounds, about 1/4-inch thick. You can use a mandoline slicer for even slices if you have one.
- Sauté the onions and garlic: In a large, ovenproof skillet or frying pan, heat the olive oil over medium heat. Add the sliced onions and minced garlic and sauté for about 3-4 minutes, or until the onions turn translucent and start to soften.
- Add the potatoes: Add the sliced potatoes to the skillet. Season with salt, black pepper, smoked paprika, dried thyme, and dried rosemary. Gently toss everything together to ensure the potatoes are coated with the seasoning.
- Cook on the stovetop: Let the potatoes cook on the stovetop for about 5-7 minutes, stirring occasionally, until they start to brown slightly.
- Add broth: Pour the chicken or vegetable broth over the potatoes and onions. This will help to cook the potatoes evenly and infuse them with flavor.
- Transfer to the oven: Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the potatoes are tender and golden brown. You can check for doneness by inserting a fork into a potato slice; it should go through easily.
- Finish in the oven: If you like, you can turn on the broiler for the last 2-3 minutes to give the top of the potatoes a nice golden crust.
- Garnish and serve: Remove the skillet from the oven, garnish with fresh parsley if desired, and serve your Patatas Panaderas hot. It makes an excellent side dish for grilled meats, roasted chicken, or as part of a tapas spread.
Enjoy your homemade Patatas Panaderas, a delightful taste of Spain!
