Duchess Potatoes

Duchess Potatoes are a classic French dish, known for their creamy texture and elegant appearance. These beautifully piped and baked mashed potatoes are a perfect accompaniment to a fancy dinner or a special holiday meal. Here’s how you can make them at home:

Ingredients:

  • 4 large potatoes (Russet or Yukon Gold), peeled and quartered
  • 1/2 cup unsalted butter, plus extra for greasing
  • 1/4 cup heavy cream
  • 2 egg yolks
  • Salt and white pepper, to taste
  • Freshly grated nutmeg, to taste (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1-2 tablespoons chopped fresh chives, for garnish

Instructions:

  1. Boil the Potatoes:
  • Place the peeled and quartered potatoes in a large pot of salted water.
  • Bring the water to a boil and cook the potatoes until they are tender, about 15-20 minutes.
  1. Drain and Mash:
  • Drain the potatoes thoroughly and return them to the pot.
  • Use a potato masher or a ricer to mash the potatoes until there are no lumps.
  1. Add Butter and Cream:
  • While the potatoes are still hot, add the butter and heavy cream to the pot.
  • Stir well until the butter is melted and the cream is fully incorporated into the potatoes. The mixture should be smooth and creamy.
  1. Season the Mixture:
  • Season the mashed potatoes with salt, white pepper, and freshly grated nutmeg (if using). Taste and adjust the seasonings according to your preference.
  1. Add Egg Yolks:
  • Beat the egg yolks lightly in a small bowl.
  • Add the beaten egg yolks to the potato mixture and mix well. The egg yolks add richness and help the duchess potatoes hold their shape.
  1. Prepare a Piping Bag:
  • Preheat your oven to 400°F (200°C).
  • Grease a baking sheet with butter.
  • Transfer the mashed potato mixture into a piping bag fitted with a large star tip.
  1. Pipe the Duchess Potatoes:
  • Pipe the mashed potatoes onto the prepared baking sheet in swirls or rosettes. Start from the center and pipe in a circular motion to create a decorative shape.
  1. Bake:
  • If desired, sprinkle the grated Parmesan cheese over the piped potatoes for an extra layer of flavor.
  • Bake the duchess potatoes in the preheated oven for 20-25 minutes or until they are golden brown and slightly crispy on the edges.
  1. Serve:
  • Carefully remove the duchess potatoes from the baking sheet and transfer them to a serving platter.
  • Garnish with chopped fresh chives for a pop of color and added freshness.
