Certainly! Bratkartoffeln, also known as German fried potatoes, is a popular and delicious dish in German cuisine. It’s a simple yet flavorful recipe that can be enjoyed as a side dish or even as a main course. Here’s how you can make Bratkartoffeln at home:

Bratkartoffeln (German Fried Potatoes) Recipe

Ingredients:

  • 1.5 lbs (700g) waxy potatoes, peeled and cut into thin slices
  • 1 large onion, finely chopped
  • 3-4 tablespoons vegetable oil or clarified butter (Schmalz)
  • Salt and black pepper, to taste
  • 1 teaspoon sweet paprika powder
  • Chopped fresh parsley, for garnish

Instructions:

  1. Prepare the Potatoes:
  • Peel the potatoes and slice them thinly. It’s important to use waxy potatoes as they hold their shape better during frying.
  1. Parboil the Potatoes:
  • In a large pot of salted boiling water, parboil the potato slices for about 5-7 minutes, just until they are slightly tender. Be careful not to overcook them; they should still be firm. Drain the potatoes and let them cool and air dry for a few minutes.
  1. Fry the Potatoes:
  • In a large, non-stick skillet, heat the vegetable oil or clarified butter over medium-high heat. Add the chopped onions and sauté until they become translucent and slightly golden brown.
  • Add the parboiled potato slices to the skillet. Spread them out in a single layer. Let them cook without stirring for a few minutes, allowing the bottom layer to crisp up and turn golden brown.
  • Gently flip the potatoes to brown the other side. Be patient and allow the potatoes to develop a crispy crust. Season with salt, black pepper, and sweet paprika powder. Continue frying until all sides of the potatoes are golden and crispy. This may take about 15-20 minutes.
  1. Serve:
  • Once the potatoes are crispy and golden brown, remove the skillet from heat. Transfer the Bratkartoffeln to a serving dish and garnish with freshly chopped parsley.
  1. Enjoy:
  • Bratkartoffeln are best served hot and crispy. They make a wonderful side dish for a variety of German meals or can be enjoyed on their own with a dollop of sour cream or applesauce.
