With a production capacity of up to 650 lbs (295 kg) per hour, the BatchWright is the highest-capacity batch fryer on the market. Its advanced temperature control ensures the perfect frying curve—critical for achieving the signature crunch and golden color of premium kettle chips. According to Daniel Luna, Director of Processing at PPM Technologies, maintaining precise oil temperatures at every stage—initial drop, stable plateau, and gradual rise—is key to consistent texture and flavor.

Energy Efficiency and Advanced Features

The BatchWright’s immersion tube heating system boasts up to 85% fuel efficiency, significantly lowering energy costs compared to conventional fryers. The Stir Assist system prevents clumping, ensuring even cooking, while the hood-down operation minimizes oil splatter, enhances safety, and reduces ventilation needs—a major advantage for plant hygiene and fire suppression.

Extended Oil Life and Simplified Maintenance

Oil degradation is a major cost factor in snack production. The BatchWright’s patent-pending lifting drum filter and optional centrifugal or pressure filtration extend oil life, reducing waste and improving shelf life. The continuous sediment removal system allows for up to 10 days of uninterrupted operation, while built-in CIP (Clean-in-Place) spray systems and stainless-steel components streamline sanitation.

Smart Controls and Seamless Integration

Operators can easily manage recipes and monitor production via the user-friendly touchscreen HMI, which tracks batch weights, temperatures, and frying times. The system’s UL-listed controls integrate with plant-wide monitoring platforms, ensuring compliance and data-driven optimization.

With a small footprint, the BatchWright is ideal for facilities with space constraints. For processors looking for a complete solution, PPM offers an optional upstream slicer with dual auger feed, ensuring uniform slices and consistent batch processing.
