Purple Potato ‘Jayoung’ Peel: A Powerful Anti-Inflammatory Agent Backed by Science

With Westernized diets contributing to rising chronic diseases, inflammatory conditions—linked to cancer and arthritis—are a growing concern. In South Korea, over 3 million people aged 60+ suffer from chronic inflammatory arthritis, highlighting the need for natural anti-inflammatory solutions.

The Rural Development Administration (RDA) of South Korea has discovered that the peel of the domestic purple potato variety ‘Jayoung’ possesses strong anti-inflammatory properties. In a key study, extracts from Jayoung potato peel inhibited PGE2 (Prostaglandin E2), a major inflammation and pain mediator, by more than 76%. This finding, patented in 2011 (Patent No. 10-2011-0049211), builds on earlier research (2009) showing that the flesh of colored potatoes suppresses prostate cancer cells.

Colored potatoes like Jayoung are not only rich in anthocyanins (potent antioxidants) but also offer:

  • Better taste and texture (mild, less astringent, ideal for raw consumption or salads).
  • Potential as a functional crop, increasing profitability for farmers.
  • A sustainable use of peel, often discarded as waste.

Dr. Jincheol Jeong, Director of the Highland Agriculture Research Center at RDA, emphasized: “Since cancer progresses through inflammatory mechanisms, this research could extend into anti-cancer applications, making colored potatoes a staple health food.”

Global Trends Support Functional Potatoes

Recent studies reinforce the benefits of pigmented potatoes:

  • A 2023 review in Food Chemistry found that purple potato anthocyanins reduce oxidative stress and inflammation.
  • The global functional food market is projected to reach $275 billion by 2025 (Grand View Research), creating opportunities for bioactive crops like Jayoung.

The Jayoung purple potato peel is a high-value agricultural byproduct with proven anti-inflammatory effects. For farmers and agribusinesses, cultivating and promoting colored potatoes could open new markets in health foods, supplements, and natural remedies. For consumers, it’s a delicious way to combat inflammation naturally.
