Maltsev: young potatoes are more suitable for frying than old ones

Young potatoes contain less starch and more nitrates than old ones, Stanislav Maltsev, Doctor of Agricultural Sciences, Head of the Laboratory for Storage and Processing of Potatoes at the Lorch Potato Research Center, said on Sputnik radio. The specialist clarified that the amount of nitrates in the composition of the root crop usually remains within the normal range.

Yamal scientists have begun work on the Arctic Bank of Healthy Potato Varieties. This is a unique scientific and technical project, within the framework of which specialists study potatoes and the soil of the regions of the North.

Young potatoes, compared with the old, last year, have a low content of dry matter and starch in tubers, their tubers are more watery. Also, young potatoes contain about twice as much vitamin C.

According to Maltsev, young potatoes are more suitable for frying and adding to salads. And mashed potatoes are better from the old one – due to the high content of starch.

There is no threat of a shortage of potatoes in Russia, the Ministry of Agriculture said earlier. According to the agency, there is also no shortage of french fries in the market.
