Kartoffelsalat – Germany

Certainly! Kartoffelsalat, or German Potato Salad, is a classic dish enjoyed throughout Germany. There are regional variations, but here’s a basic recipe for you to try:

Kartoffelsalat (German Potato Salad) Recipe

Ingredients:

  • 2 pounds (about 1 kg) waxy potatoes (such as Yukon Gold or red potatoes)
  • 1 small onion, finely chopped
  • 6 slices of bacon, diced
  • 1/2 cup (120 ml) chicken or vegetable broth
  • 1/4 cup (60 ml) white vinegar
  • 2 tablespoons (30 ml) vegetable oil
  • 1 tablespoon (15 g) sugar
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Boil Potatoes: Start by washing the potatoes thoroughly. Place them in a large pot, cover with water, and add a pinch of salt. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes. Drain the potatoes and let them cool slightly until you can handle them.
  2. Peel and Slice Potatoes: While the potatoes are still warm but manageable, peel the skins off (optional) and slice them into 1/4-inch (0.5 cm) thick rounds. Place the sliced potatoes in a large mixing bowl.
  3. Cook Bacon and Onion: In a skillet over medium heat, cook the diced bacon until it becomes crispy, stirring occasionally. Remove the bacon from the pan and set aside. In the remaining bacon fat, sauté the finely chopped onion until it becomes translucent and slightly caramelized.
  4. Prepare Dressing: In a small saucepan, combine the chicken or vegetable broth, white vinegar, vegetable oil, and sugar. Heat the mixture over medium heat, stirring until the sugar dissolves. Season with salt and black pepper to taste.
  5. Combine Ingredients: Pour the warm dressing over the sliced potatoes in the mixing bowl. Add the cooked bacon and sautéed onions. Gently toss the ingredients together, ensuring the potatoes are well coated with the dressing.
  6. Let it Marinate: Let the Kartoffelsalat sit at room temperature for at least 30 minutes to allow the flavors to meld. The warm potatoes will absorb the dressing, enhancing the taste.
  7. Serve: Just before serving, garnish the Kartoffelsalat with chopped fresh parsley. It can be served warm or at room temperature and is a great accompaniment to grilled meats, sausages, or as a stand-alone dish.
