Potatoes in Hokkaido are typically harvested between August and October. Post-harvest, they are stored in controlled environments until June the following year. Without proper storage, potatoes can sprout or develop undesirable frying properties. However, Calbee Potato Inc. (a group company) utilizes precision storage management to extend shelf life while preserving optimal texture and flavor for chip production.

Key innovations in Calbee’s storage process include:

  • Temperature and humidity control to minimize spoilage and sprouting.
