Enjoy Crispy Baked Potato Skins with Healthy Toppings

Prepare baked potato skins with cheddar cheese, sour cream, and herbs for a delicious and nutritious snack.

Potato skins are not only a delicious but also a nutritious snack, perfect for family gatherings or parties. This recipe offers a way to bake the skins until crispy, season them, and add healthy toppings.

Ingredients:

  • 4 large russet potatoes (about 1.4 kg), thoroughly washed
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese
  • Sour cream, green onions, and/or crumbled crispy bacon for garnish (optional)

Step-by-Step Instructions:

1. Prepare the Potatoes:

  • Poke the potatoes several times with a fork.
  • Place them on a microwave-safe plate and cook on high for 5 minutes.
  • Carefully turn them over and continue microwaving for another 8–10 minutes, until they are soft.

2. Preheat for Baking:

  • Set your oven to broil (high heat).
  • Line a large baking sheet with foil.

3. Prepare the Skins:

  • Slice the potatoes in half lengthwise and carefully scoop out most of the flesh, leaving about 1/4 inch (0.6 cm) of the potato inside the skin. (Save the scooped-out potato for another dish!)
  • Brush both sides of the skins with olive oil and season with salt and pepper.
  • Place the skins cut-side down on the prepared baking sheet.

4. Bake Until Crispy:

  • Broil the skins, flipping occasionally, until they turn golden and crispy, about 8–10 minutes.
  • Flip the skins cut-side up and sprinkle each one with 1 tablespoon of shredded cheddar cheese.
  • Return to the oven and broil for another 1–2 minutes, until the cheese melts.

5. Serve and Enjoy:

  • Serve hot with sour cream, chopped green onions, and/or crispy crumbled bacon as toppings.

Nutritional Benefits & Variations:

Potato skins are high in fiber and nutrients. Using olive oil and a moderate amount of cheese makes this snack a healthier alternative to deep-fried versions. You can also customize the toppings by adding broccoli, spinach, or mushrooms to boost the vitamin and mineral content.
