Potatoes are a widely consumed global food crop with high nutritional value, but they are prone to sprouting during storage, which reduces their quality and can lead to toxicity. To address this issue, researchers at Anqing Normal University in China studied the effects of a zein-based potato germination inhibitor, which was found to be effective in reducing the germination rate of potatoes during storage. The optimal concentration of zein was determined to be 1.25 g/L, and the addition of palygorskite further reduced the germination rate. The zein-based inhibitor was found to be stable during storage and did not impact potato growth during cultivation. These findings offer promising implications for the development of the potato industry and vegetable storage.

Improving the shelf life of potatoes is crucial for the further development of the potato industry, and inhibiting potato germination during storage is one effective solution. The use of harmful compounds like chlorpropham has been explored, but alternative methods using physical methods and compounds have also demonstrated inhibitory effects. Biopolymers like zein have been utilized to create functional materials with excellent results. Zein, a corn-derived storage protein, forms a robust film and inhibits gas exchange, making it a promising option for use as a potato germination inhibitor.

In the study conducted by researchers at Anqing Normal University, a zein-based potato germination inhibitor was developed and studied for its properties and effects. The optimal concentration of zein was determined to be 1.25 g/L, which resulted in a germination rate of 38%. The addition of palygorskite further reduced the germination rate. The film formed by the inhibitor was uniform and hydrophobic, enhancing its effectiveness. Moreover, zein-based inhibitors are easy to prepare, safe, and useful for potato and vegetable storage.

The development of a zein-based potato germination inhibitor offers promising implications for the further development of the potato industry and vegetable storage. The use of zein, a corn-derived storage protein, provides an effective and safe method for inhibiting potato germination during storage.
