Boulangère Potatoes
Boulangère Potatoes, or Pommes Boulangère, is a classic French potato dish that combines thinly sliced potatoes with onions, garlic, and flavorful broth, all baked to perfection. This dish is simple yet elegant, making it a perfect side for special occasions or family dinners.
Ingredients:
- 4 large potatoes, peeled and thinly sliced (about 1/8 inch thick)
- 2 onions, thinly sliced
- 2 cloves of garlic, minced
- 2 cups beef or vegetable broth
- 1/4 cup fresh parsley, chopped
- 2 tablespoons butter, plus extra for greasing
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a baking dish generously with butter.
2. Prepare the Potatoes and Onions:
- Peel and thinly slice the potatoes and onions. A mandoline slicer can be very helpful for achieving consistent thickness.
- In a large skillet, heat the olive oil over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat.
3. Layer the Potatoes and Onions:
- Arrange a layer of sliced potatoes in the bottom of the greased baking dish, slightly overlapping the slices. Season with salt and pepper.
- Spread half of the sautéed onions and garlic mixture over the potatoes.
- Repeat with another layer of potatoes, seasoning with salt and pepper, and the remaining onion and garlic mixture.
4. Add Liquid:
- Pour the hot broth over the layered potatoes and onions. The liquid should almost cover the top layer of potatoes. Add more broth if necessary.
5. Add Flavor:
- Dot the top of the potatoes with butter, distributing it evenly across the dish. Sprinkle half of the chopped parsley over the top.
6. Bake:
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.
7. Brown the Top (Optional):
- If you desire a crispy top, remove the foil during the last 15-20 minutes of baking. This will allow the top layer of potatoes to brown slightly.
8. Garnish and Serve:
- Once the potatoes are tender and golden brown, remove from the oven. Sprinkle the remaining chopped parsley over the top for a burst of color and freshness.
