Purple potatoes are high in antioxidants. This was told to a BelTA correspondent by the head of the potato breeding department of the Scientific and Practical Center for Potato and Horticulture of the National Academy of Sciences of Belarus Yulia Gunko.
“Purple potatoes are ordinary potatoes with pigmented flesh. It is obtained by crossing, like ordinary potatoes. There is no gene change or anything else. However, such potatoes contain a large amount of antioxidants,” said Yulia Gunko.
More than 120 varieties with pigmented pulp have been created at the Scientific and Practical Center of the National Academy of Sciences of Belarus for potato and horticulture. “Now they are all being evaluated in our center for economically valuable traits. One of them has already been transferred to the state service for testing, but there is still an additional assessment in various parameters,” the specialist added.
