Swiss Rösti Recipe
Rösti is a beloved Swiss dish made from grated potatoes, often served as a breakfast item but also enjoyed throughout the day. It’s crispy on the outside, tender on the inside, and incredibly satisfying. Here’s how you can make authentic Swiss Rösti at home.
Ingredients:
- 4 large potatoes, peeled and grated
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Optional: 1 onion, finely chopped (for extra flavor)
Instructions:
1. Grate the Potatoes:
- Peel the potatoes and grate them using the large holes of a box grater. If you’re using onions, grate them as well.
2. Rinse and Dry:
- Place the grated potatoes (and onions, if using) in a large bowl of cold water. Rinse them thoroughly to remove excess starch. Drain the water and pat the potatoes dry with paper towels or a clean kitchen cloth.
3. Season:
- Season the grated potatoes with salt and pepper. Mix well to ensure the seasoning is evenly distributed.
4. Preheat the Pan:
- Heat 1 tablespoon of butter and 1 tablespoon of vegetable oil in a non-stick skillet or frying pan over medium-high heat. The combination of butter and oil will give the rösti a crispy texture.
5. Cook the Rösti:
- Once the butter has melted and the pan is hot, add the seasoned grated potatoes, spreading them evenly across the pan. Use a spatula to press down the potatoes gently to form a flat, compact layer.
6. Cook Until Golden Brown:
- Cook the rösti without stirring for about 5-7 minutes, or until the bottom is golden brown and crispy. To check, lift a corner with a spatula. If it’s golden brown, it’s time to flip.
7. Flip the Rösti:
- Place a large plate over the pan and carefully invert the rösti onto the plate. Add the remaining butter and oil to the pan. Slide the rösti back into the pan, uncooked side down. Cook for another 5-7 minutes until this side is golden brown and crispy as well.
8. Serve:
- Once both sides are crispy and golden brown, slide the rösti onto a cutting board. Let it rest for a minute or two to make it easier to cut.
- Slice the rösti into wedges or squares and serve hot. It’s delicious on its own or topped with sour cream, applesauce, or even smoked salmon for a more elaborate meal.
