In Russian restaurants, there is a shortage of the type of potato that is necessary for making “fries”. Andrey Tretyakov, a restaurateur and co-founder of Moscow bars Stereo People Group (Dogs in the fog, Safety, Stereo People), told Gazeta.Ru about this.
“Now many varieties of potatoes have disappeared. We tried 12 types for making branded fries, but only one barely suited us, ”said Tretyakov.
According to the restaurateur, the potatoes needed to prepare the dish will not disappear forever, but it is worth waiting out the shortage and preparing for long supply interruptions. Logistics with other countries has not yet been established, and delivery companies are leaving Russia.
“All the problems are related to broken logistics or the difficulty of replacing brands that have left or are selling the business. Over time, everything will get better, because there are a lot of potatoes and fields for growing potatoes in the country, ”the restaurateur explained.
