Here’s a recipe for Reibekuchen, a traditional German potato pancake:
Ingredients:
- 4 large potatoes, peeled
- 1 onion, finely grated
- 2 eggs
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
- Applesauce or sour cream for serving (optional)
Instructions:
- Grate the potatoes using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, mix the grated potatoes, finely grated onion, eggs, and flour. Stir until well combined. The flour helps bind the mixture together.
- Season the mixture with salt and pepper to taste. Remember that potatoes absorb salt, so it’s okay to be generous with seasoning.
- Heat vegetable oil in a large skillet over medium-high heat. You’ll need enough oil to cover the bottom of the pan.
- Once the oil is hot, drop spoonfuls of the potato mixture into the pan, flattening them with the back of the spoon to form pancakes. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the Reibekuchen from the pan and place them on a plate lined with paper towels to absorb any excess oil.
- Continue the process until all the potato mixture is used, adding more oil to the pan as needed.
- Serve the Reibekuchen hot, either plain or with applesauce or sour cream on the side.
Enjoy your delicious Reibekuchen!
