Patatas Bravas – Spain

Patatas Bravas Recipe

Patatas Bravas is a classic Spanish tapas dish consisting of crispy fried potatoes served with a spicy tomato sauce and aioli (garlic mayonnaise). It’s a delightful dish that’s perfect for sharing with friends and family. Here’s how to make it:

Ingredients:

For the Potatoes:

  • 4 large russet potatoes, peeled and cut into 1-inch cubes
  • Vegetable oil for frying
  • Salt, to taste

For the Spicy Tomato Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to taste for spiciness)
  • Salt and pepper, to taste

For the Aioli:

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Potatoes:
  • Heat the vegetable oil in a deep pan or a fryer to 350°F (175°C).
  • Carefully add the potato cubes to the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.
  • Fry the potatoes for about 5-7 minutes until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain them on paper towels.
  • Sprinkle the fried potatoes with salt while they are still hot.
  1. Make the Spicy Tomato Sauce:
  • In a saucepan, heat the olive oil over medium heat.
  • Add the finely chopped onion and cook until it becomes translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the diced tomatoes, smoked paprika, red pepper flakes, salt, and pepper. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens.
  1. Prepare the Aioli:
  • In a small bowl, combine the mayonnaise, minced garlic, and lemon juice.
  • Season with salt and pepper to taste. Mix well and set aside.
  1. Serve:
  • Place the crispy fried potatoes on a serving platter.
  • Drizzle the spicy tomato sauce over the potatoes.
  • Serve the aioli on the side or drizzle it over the potatoes as well for extra creaminess.
  1. Garnish:
  • Optionally, garnish your Patatas Bravas with chopped fresh parsley or chives for a pop of color and flavor.
