Patatas Alioli Recipe

Ingredients:
For the Patatas (Potatoes):
- 4 large russet potatoes, peeled and cut into thick strips or cubes

- 1 large egg yolk, at room temperature
- 1 teaspoon Dijon mustard

Instructions:
1. Prepare the Potatoes:
a. Rinse the potato slices in cold water to remove excess starch. Pat them dry with paper towels.
b. Heat the vegetable oil in a deep frying pan or a fryer to 350-375°F (175-190°C). You’ll need enough oil to submerge the potatoes.
c. Carefully add the potato slices to the hot oil in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
d. Sprinkle the fried potatoes with salt while they’re still hot. This helps the salt stick to the potatoes better.
2. Make the Alioli Sauce:
a. In a mortar and pestle, crush the minced garlic with a pinch of salt until you get a smooth paste. You can also use a garlic press.
b. In a mixing bowl, whisk together the egg yolk and Dijon mustard.
c. Slowly drizzle in the olive oil, a few drops at a time, while continuously whisking. Once the mixture starts to thicken and emulsify, you can add the oil more quickly but still in a steady stream.
d. Add the crushed garlic paste and lemon juice to the mayonnaise mixture and whisk until well combined. Season with salt and pepper to taste.
