Lyonnaise Potatoes Recipe
Ingredients:
- 2 lbs (about 1 kg) potatoes, peeled and sliced into 1/4-inch rounds
- 2 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Potatoes:
- Peel the potatoes and slice them into 1/4-inch rounds. It’s essential to keep the slices uniform to ensure even cooking.
- Parboil the Potatoes:
- Place the potato slices in a large pot of salted boiling water. Parboil them for about 5 minutes, or until they are slightly softened but not fully cooked. Drain the potatoes and set them aside.
- Sauté the Onions:
- In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the thinly sliced onions and sauté until they are soft and golden brown, stirring occasionally. This process may take about 15-20 minutes. Once caramelized, remove the onions from the skillet and set them aside.
- Cook the Potatoes:
- In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Arrange the parboiled potato slices in a single layer in the skillet. Cook the potatoes without stirring, allowing them to develop a golden crust on the bottom. After 5-7 minutes, flip the potatoes using a spatula to brown the other side. Cook until the potatoes are golden and crispy on both sides. Season with salt and freshly ground black pepper to taste.
- Combine Potatoes and Onions:
- Once the potatoes are crispy and golden, add the caramelized onions back into the skillet. Gently toss the potatoes and onions together, allowing them to combine and heat through for a few minutes. Adjust the seasoning if necessary.
- Garnish and Serve:
- Remove the skillet from the heat and transfer the Lyonnaise potatoes and onions to a serving dish. Garnish with freshly chopped parsley for a burst of color and added freshness.
