- 1 teaspoon turmeric powder

- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
For the Tomato-Based Gravy:
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 large tomatoes, pureed
- 1/2 cup yogurt, whisked
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 cup water
- Fresh coriander leaves for garnish
Instructions:
- Start by preparing the potato filling:
- Cut the boiled and peeled potatoes into bite-sized cubes.
- In a large pan, heat 2 tablespoons of oil over medium heat.
- Add cumin seeds and asafoetida (hing) and let them sizzle for a few seconds.
- Add the potato cubes and stir-fry for about 5 minutes until they turn golden brown.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
- Sprinkle chopped fresh coriander leaves over the potatoes, mix, and set them aside.
- Now, let’s prepare the tomato-based gravy:
- In a separate pan, heat 2 tablespoons of oil over medium heat.
- Add the finely chopped onions and sauté until they turn translucent.
