The Australian Research and Development company Potato Magic has developed a process that helps make potatoes melt when they are exposed to increased levels of heat.
This process creates a basic product with a large number of end applications that can be used in different sectors of the food industry.
The product that has been given the name CHATO, can be used for the preparation of non-dairy cheese, dips, mayonnaise and even ice cream. The Halloumi variant can be, for example, baked crispy, while the inside would melt down such as Cheddar cheese does.
The product is also suitable for the preparation of mashed potatoes and other related products, and can also be used as a ready-to-eat potato ingredient for salads.
Product development is now entering the pilot phase and the company is looking for potential suppliers and investors.
