Aloo Dum Recipe – Spicy Indian Potato Curry

Aloo Dum, a popular Indian dish, is a delightful and spicy potato curry that hails from the vibrant culinary traditions of India. This recipe combines tender potatoes with a rich blend of spices and a tomato-based sauce, creating a flavorful and satisfying dish. Enjoy it with rice, naan, or your favorite Indian bread.

Ingredients:

  • 4 medium-sized potatoes, peeled and cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • 1 cup water
  • Fresh cilantro leaves, chopped (for garnish)
  • 2-3 green chilies, slit (optional, for extra heat)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 2-3 dried red chilies (optional, for garnish)

Instructions:

  1. Prepare the Potatoes:
  • Peel the potatoes and cut them into cubes. Rinse them in cold water to remove excess starch. Set aside.
  1. Fry the Potatoes:
  • Heat 1 tablespoon of oil in a deep pan or a pressure cooker over medium heat. Add the potato cubes and fry them until they are golden brown. Remove the potatoes and set them aside.
  1. Temper the Spices:
  • In the same pan, add the remaining 1 tablespoon of oil. Add mustard seeds, cumin seeds, dried red chilies, and asafoetida. Let the seeds splutter and release their aroma.
  1. Add Aromatics:
  • Add finely chopped onions to the pan. Sauté until they turn golden brown.
  1. Add Tomatoes and Spices:
  • Add ginger-garlic paste and sauté until the raw smell disappears. Add chopped tomatoes and cook until they turn soft and the oil starts to separate.
  1. Spice it Up:
  • Add turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well and cook the masala until the oil separates from the spice mixture.
  1. Cook the Potatoes:
  • Add the fried potato cubes to the pan. Stir well to coat the potatoes with the masala.
  1. Simmer and Cook:
  • Add water to the pan, cover it, and let it simmer over low heat. If you’re using a pressure cooker, cover it without the weight and cook for 10-12 minutes until the potatoes are tender and the curry has thickened.
  1. Finish with Garam Masala:
  • Once the potatoes are cooked, add garam masala and slit green chilies (if using). Stir gently to combine.
  1. Garnish and Serve:
    • Garnish the Aloo Dum with fresh cilantro leaves. Serve hot with naan, roti, or steamed rice.
