Aloo Dum Recipe – Spicy Indian Potato Curry
Aloo Dum, a popular Indian dish, is a delightful and spicy potato curry that hails from the vibrant culinary traditions of India. Ingredients:
- 4 medium-sized potatoes, peeled and cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 teaspoons ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon garam masala
- Salt, to taste
- 1 cup water
- Fresh cilantro leaves, chopped (for garnish)
- 2-3 green chilies, slit (optional, for extra heat)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 2-3 dried red chilies (optional, for garnish)
Instructions:
- Prepare the Potatoes:
- Peel the potatoes and cut them into cubes. Rinse them in cold water to remove excess starch. Set aside.
- Fry the Potatoes:
- Heat 1 tablespoon of oil in a deep pan or a pressure cooker over medium heat. Add the potato cubes and fry them until they are golden brown. Remove the potatoes and set them aside.
- Temper the Spices:
- In the same pan, add the remaining 1 tablespoon of oil. Add mustard seeds, cumin seeds, dried red chilies, and asafoetida. Let the seeds splutter and release their aroma.
- Add Aromatics:
- Add finely chopped onions to the pan. Sauté until they turn golden brown.
- Add Tomatoes and Spices:
- Add ginger-garlic paste and sauté until the raw smell disappears. Add chopped tomatoes and cook until they turn soft and the oil starts to separate.
- Spice it Up:
- Add turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well and cook the masala until the oil separates from the spice mixture.
- Cook the Potatoes:
- Add the fried potato cubes to the pan. Stir well to coat the potatoes with the masala.

- Add water to the pan, cover it, and let it simmer over low heat. If you’re using a pressure cooker, cover it without the weight and cook for 10-12 minutes until the potatoes are tender and the curry has thickened.

- Once the potatoes are cooked, add garam masala and slit green chilies (if using). Stir gently to combine.
