Reibekuchen – Germany

Here’s a recipe for Reibekuchen, a traditional German potato pancake:

Ingredients:

  • 4 large potatoes, peeled
  • 1 onion, finely grated
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Applesauce or sour cream for serving (optional)

Instructions:

  1. Grate the potatoes using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a large bowl, mix the grated potatoes, finely grated onion, eggs, and flour. Stir until well combined. The flour helps bind the mixture together.
  3. Season the mixture with salt and pepper to taste. Remember that potatoes absorb salt, so it’s okay to be generous with seasoning.
  4. Heat vegetable oil in a large skillet over medium-high heat. You’ll need enough oil to cover the bottom of the pan.
  5. Once the oil is hot, drop spoonfuls of the potato mixture into the pan, flattening them with the back of the spoon to form pancakes. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the Reibekuchen from the pan and place them on a plate lined with paper towels to absorb any excess oil.
  7. Continue the process until all the potato mixture is used, adding more oil to the pan as needed.
  8. Serve the Reibekuchen hot, either plain or with applesauce or sour cream on the side.
