Aloo Palak – India

Aloo Palak (Potato Spinach Curry) Recipe

Ingredients:

  • 3 large potatoes, peeled and diced into small cubes
  • 4 cups fresh spinach leaves, washed and chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves, chopped for garnish

Instructions:

  1. Prepare the Potatoes:
  • Peel the potatoes and dice them into small cubes.
  • Heat 1 tablespoon of oil in a pan over medium heat. Add the diced potatoes and fry them until they are golden brown and crispy. Remove them from the pan and set aside.
  1. Prepare the Spinach:
  • In the same pan, add another tablespoon of oil if needed. Add cumin seeds and let them splutter.
  • Add chopped onions, green chilies, garlic, and ginger. Sauté until the onions turn translucent.
  1. Add Tomatoes and Spices:
  • Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes until the spices are well incorporated.
  1. Add Spinach:
  • Add the chopped spinach leaves to the pan. Stir well and cook until the spinach wilts down and becomes soft. This will take a few minutes.
  1. Combine with Potatoes:
  • Once the spinach is cooked, add the fried potatoes to the pan. Mix well so that the potatoes are coated with the spinach and spice mixture.
  1. Simmer and Garnish:
  • Add garam masala powder and let the curry simmer for a few more minutes, allowing the flavors to meld together.
  • Taste and adjust salt and spices according to your preference.
  1. Serve:
  • Remove the curry from heat and transfer it to a serving dish.
  • Garnish with freshly chopped coriander leaves.
  • Aloo Palak is ready to be served! Enjoy it hot with roti, naan, or rice.

Note: You can adjust the spice levels according to your preference. If you prefer a milder curry, reduce the amount of green chilies and red chili powder. Similarly, if you like it spicier, feel free to increase the amount of chili powder or add a pinch of cayenne pepper.
