Emeritus professor of food technology Tiny van Boekel argues that there is no good definition and there is also no legal regulation about what may consist of fresh food. “For some people ‘fresh’ means that little time has passed since harvest or preparation. They do not always realize that potatoes, apples and pears often have been in conditioned storage for an extended period of time before these products go to the supermarket.
